Tasty Tuesday - Pumpkin Recipes Are On The Plate!


Welcome to another Tasty Tuesday ... Today's harvest of recipes is all about Pumpkin!  I want to share my Pumpkin Mushroom Soup which is a huge favorite in my family for October and November.

These awesome bloggers and cooks have proven that pumpkin is good for breakfast, lunch, dinner and in between!  And remember how simple it is to copy the recipes to your 4virtu blog, make a list and send it to your phone to shop and create pumpkiny goodness!

Pumpkin Streusel Muffins from Baked by Rachel (@rachelcurrier) - Rachel said that baking is her obsession and looking at her recipes and pics, I would like to volunteer to be the taste tester for her obsession!

Spiced Pumpkin Muffins from Little Locavores (@sustainable cooking) -   with a delicious option of golden raisins or chocolate chips ... can I have both?



Pumpkin Risotto aka Risotto Con La Zucca from La Buona Cucina - Ann is the food columnist for Harlots Sauce and I just would like to go on the record as saying that I would like to roll in her recipes.  Weird, I know but I would only do that after I stuffed my face!  

Black Bean Pumpkin Soup from Smitten Kitchen - Smitten Kitchen is one of my favorite food blogs and I love this recipe - if it meets their approval - we need to add it to our boxes!

Pumpkin Lollipops from Woman with a Whisk - for the kid in all of us!  And what a great project to do with the kids!

Kim's Pumpkin Mushroom Soup - my Mom adopted this recipe about 25 years ago and it has quickly become become a family tradition.
  • 2 TB butter
  • 1/2 lb sliced mushrooms (or more if you would like )
  • 1/2 cup chopped onion
  • 2 TB flour
  • 3 cup chicken broth
  • 2 cup pumpkin (canned pumpkin is best)
  • 1 cup cream (half and half works well too!)
  • 1 TB honey
  • 1 TB curry (or more to taste)
  • S&P
  • Sour Cream
  • Croutons (NOT package - make your own!!)
In soup pot, saute mushrooms in butter and then remove.
In same soup pot, saute onions and then stir in broth, flour and pumpkin and bring to a boil.
Add honey, curry, S&P.
Return mushrooms.
Add cream and then heat on low to medium heat.
Serve with spoonful of sour cream in center and croutons.
