Tasty Tuesday - What is Your Favorite Comfort Food?

We all love comfort food - these are the faithful standbys ... the foods that by aroma and taste evoke nostalgic memories or take us back to our "happy place".  My family is all about cooking.  The kitchen was the common gathering spot; something yummy was always on the stove.
My favorite recipe for Comfort Food is Mac and Cheese.  Gooey cheese, soft macaroni and a crispy crust and I love it hot and cold!

8 TB (1 stick) butter
6 slices of white bread with crusts removed & torn
5 1/2 cups of milk
1/2 cup all purpose flour
2 tsp coarse salt
1/4 tsp ground nutmeg
1/4 tsp ground black pepper
1/4 tsp cayenne pepper
18 oz sharp cheddar cheese - grated
8 oz swiss cheese - grated (gruyere is a nice way to fancy it up!)
5 oz Romano cheese - grated
1 pound elbow macaroni

Preheat oven to 375
Butter 3 quart casserole dish
Place bread in medium bowl
In small saucepan over medium heat, melt 2 TB butter.  Pour melted butter into bowl with bread and toss and then set aside.
Warm milk over medium heat in pan.
Melt remaining butter in skillet.
When butter bubbles, add flour and cook while stirring for 1 minute.
While whisking, slowly pour hot milk into skillet, keeping smooth.
Cook and whisk until mixture bubbles and becomes thick - approx 8-12 minutes.
Remove from heat.
Stir in salt, nutmeg, peppers, and 3 cups of cheese.

Cook Macaroni - Rinse in cold water - Drain well.
Stir macaroni into cheese sauce.
Pour into casserole - Add remaining cheese & then bread chunks.
Bake until golden brown x 30 min.
Let it sit for 5 min and then serve!
